Ingredients -
4 oz can sliced mushrooms, drained
1 sliced onion
1 teaspoon tarragon
6 oz can tomato paste
12 oz water
6 eye of round steaks
4 crushed cloves garlic
2 tablespoons canola oil
Salt and black pepper
Mashed potato, to serve
Corn kernels, to serve
Preparation:
Pound the steaks to tenderize them, if necessary.
Brown the meat in a skillet in the oil on both sides, and then add the onions, garlic, and sauté them with the meat for about 5 minutes or until the onions are translucent.
Add the mushrooms and stir well.
Mix the water with the tomato paste and pour this liquid over the meat.
Stir in the tarragon and some salt and pepper.
Turn the heat down to low and cover the pan.
Cook for about 12 minutes or until the meat is done.
Serve with the mashed potato and corn.
You can pour some of the gravy over the potatoes and some over the steak if you like.
